These energy bites with coconut and cherries make such a great snack! They’re super easy to make and perfect when you’re craving something sweet but want to eat healthy! Plus, they’re the perfect gift for Mother’s Day.
I first tried energy bites (or energy balls – however you wanna call them) on a trip to Montreal a couple of years ago. We had lunch at a little vegan cafe and for dessert we had different kinds of raw vegan energy balls. And they were soooo good! I fell in love with these healthy vegan treats right away. I’d heard about them before, but somehow I’ve never gotten around to making them myself. Mostly because I didn’t have a very good blender or food processor at that time. But homemade bars and bites are so much better than store-bought ones. And you can save a lot of money too!
So for those of you who have never heard of energy bites:
WHAT ARE ENERGY BITES OR ENERGY BALLS?
Energy balls, also called energy bites, are little raw vegan balls usually made of nuts and dried fruits such as dates. You can also add oats, chocolate chips, flax seeds, and nut butters. Whatever ingredients you choose, energy bites are usually super healthy and nutritious, which makes them perfect for on-the-go-snacking! This time I made raw vegan energy balls without nut butter.
HOW TO MAKE ENERGY BALLS:
It’s super easy to make energy balls! All you need is a good blender or a food processor. Then just put in all of your ingredients and pulse until all ingredients are blended. Usually you have to pulse about 6-8 times. You should get a very sticky mixture you can easily form into little energy balls. I love rolling them in cocoa, sesame seeds, or coconut flakes. So good!
HOW LONG WILL ENERGY BITES LAST? AND HOW TO STORE ENERGY BITES:
Energy balls can be stored in an air-tight container in the fridge for up to one week. But usually they don’t last this long in our house…They’re just waaay too yummy!
Energy balls are also the perfect little gift. I mean they’re healthy, super delicious, and homemade. So what is there not to love about them?! If you’re looking for a homemade vegan gift for Mother’s Day, these are great!
I’ve made sooo many different kinds of energy balls in the last years, but these energy bites with coconut and cherries are one of my favorites. Probably besides my carrot cake energy balls. They’re made of almonds, cashews, dried cherries, dates, rolled oats, and chia seeds. And I rolled them in coconut flakes.

1 cup almonds
1/2 cup cashews
1 tablespoon chia seeds
3/4 cup dried cherries
1/2 cup rolled oats
2 tablespoons coconut flakes
more coconut flakes, to roll in
- Put all ingredients into a high speed blender or food processor and pulse until all ingredients are well combined. Usually you have to pulse about 6-8 times. You should get a very sticky mixture, which can easily be formed into little balls.
- Form the mixture into 18-20 energy balls. Put some coconut flakes on a plate and roll the energy bites in them. The energy balls can be stored in an air-tight container in the fridge for up to one week. Enjoy!
